we at the house started to ask what makes turkymeat white or dark?some say it,s due to the type of muclestructer, others say its due to the flow of blood through outer inpendeges. well ide like to know please,thank you.

For birds that fly long distances, like ducks, the muscles need a very good blood supply. The blood supply gives the meat the dark coloration.

The turkey doesnt fly much at all. Therefore his breast muscles dont need the blood, and are whiter. His leg muscles need more blood, and the legs tend to be dark meat.

At least that is the explanation....Beef is essentially all dark red meat, as is whale...I can see the whale needing blood to the muscles, but cows dont really do much physically.
