I'm going to focus solely on fiction here. So, in no particular order, here they are:

The House of Spirits by Isabelle Allende
At least one of the major distopias (We by Zamyatin, Brave New World by Huxley, 1984 by Orwell-yes did this to get three books in and only use up one space :-)

Tale of Two Cities - The last half of the book is abosolutely increadible.
Uncle Toms Cabin - A great read. Very fun and quick.
