I have a ECS P4M800PRO-M motherboard and need to disable the onboard video so I can use my video card

That is disabled in the BIOS.

Locate your system Preferences "device manager" and select "video output".
From there you need to check the disable video card option or uncheck that option, shut down, reboot, then install your new video card. Make sure you follow the necessary instructions that came with your new card to allow for proper driver information.
Also, don't forget to run the direct x setup with this command: Dxdiag.exe The direct x will preform a system check of your video card and sound driver and return a message describing if any updates or errors have been detected.
Agreed I to hate "All In One Boards" But over time you'll get the hang of it.

Just plug the Video card in and plug the monitor to it. The add-on video card automatically over-rides the onboard video

Such options are provided in th system BIOS. Get into it and check thoroughly. You should be able to do it.
