Because the international symbol for medicine is Hermes staff. It is an ancient Greek symbol of a staff ( stick ) with either one or two snakes wrapped around it.

It's the same everywhere: actually the international symbol of Medicine is a rod with two entwined snakes. It's a very ancient Sumerian symbol, it was the symbol of the Sumerian God Enki who was a skilled physician, other than a DNA expert ( the symbol in facts allegedly represents the DNA) ,then in Ancient Greece it became the symbol of Asklepeios the God of Medicine, and on the Hyppocrates' Oath (the oath every doctor still takes since the time of Hyppocrates), you can find it too.

I think in the OLD DAYS a doctor thought a good way to cure someone was to BLEED out the poison or the Virus etc... I know there were people that did that type of thing in the US back in the day. The Snake was a symbol they used for that here so Im guessing that has something to do with it ?

In Egypt, the first "doctors" believed that snake venom could cure many illnesses. They took on the snake as one of the symbols representing their profession.
The American Medical Association uses the snake in their logo, also.

Its USED EVERYWHERE not just Amsterdam- This symbol is referred to as the staff of Asclepius.
It comes from the Greek god of medicine Asclepius, who was the son of Appollo and Coronis. AND it also comes from the Bible when God allegedly said to Moses "Make a fiery serpent, and set it on a pole; and every one who is bitten, when he sees it, shall live.“
And for the guy who stated that it was the symbol of the Sumerian God Enki who was a skilled physician, other than a DNA expert - THATS CRAP. They knew NOTHING of DNA back then, and they CERTAINLY didnt know what DNA Strands looked like.
