ITS VERY SIMPLE we all made this thing to wish like this on this occation happee chrismas, happy new year & many more like this.....

If I had to guess I would say we say Merry, because Mary was the mother of Jesus and Happy, because we want to embrace the new year on a positive note!

Some people do say Happy Christmas, nothing wrong with it.

could be from the witches( who celebrate winter solstice at the same time or should I say first) ; who say- Merry Meet, Merry Part, and Merry meet Again.
