well being an asian person born white working in these joints in high school and college, I don't think the greasy is intentional. Most of the 'chinese food' you know today is rooted actually from the US. In San Fran in the gold rush days they had many Chinese immigrants as slaves so they brought culture into the area, but the stuff we see today 'egg rolls' , 'chow mein' etc were born of this boom. You do not see this stuff in China. The last 2 'Chinese' places I worked (in the Seattle area) were owned by Vietnamese peeps and they cook their home foods for like say employee meals and such, not what they sell. Asian these days can be muted unless you are in authentic hoods.

It depends on the Chinese restaurant you go to, but there is a biased. The several cook book that I have states its perception. They see what Americans eat and serve it in the style they think Americans like (assuming your an American) Language barrier plays a role too. Its hard for many Chinese to find out what there non Chinese costumer wants if there english is not perfect. You are probably going to the cheap Chinese restaurants, because they tend to use the cheap often recycled oil.

Obviosusly, you're not going to a good Chinese restaurant. Besides, take-out is take-out. It's like getting McDonald's. It's quick and dirty (figuratively speaking).
Their purpose is to make money. If you're willing to fork over the dollars for what they serve, then it's your own fault. It's not their job to make sure that the food is not greasy or that it's healthy. The choice is up to you whether you eat the food or not.

the answer is simple, westerners have absolutely no interest in real chinese food.
if you really want boiled rice and fish, make it at home.
but no bugger in this country would actually buy it from a takeaway!
