Because of pigments in the food they eat. There are actually cases of flamingos in zoos being fed a non-natural diet, have actually turned white.

It comes from their diet. When they are feeding on things like shrimp, they are pink. Deprived of those dietary factors they pale and can be white.

I think I heard it was from the shrimp they eat. Without shrimp, they lose the pink color.
