Maybe, but that's really up to you I think.

Personally, I like to have fun with words, I wish everyone a Peaceful "HanuKwanMas" People get it and are appreciative of their inclusion.

Unfortunately, my Pagan & Wiccan friends celebrate Yule on the Solstice, and no matter how hard I tried, I couldn't fit it in to this conjunctive "word", so they get the obligatory Happy Holiday.

It's just plain strange. I don't know a single person from another culture or religion who would be offended by just plain old Happy Holidays. My doctor who's a muslim said he loves getting all cards including Christmas cards. He said "after all it IS Christmas, so what's the big deal?" He's awesome!

I think so. Happy Holidays is just clearly stating hope their holiday goes well. Not really saying which one it is. So "Happy Holidays" works well alone.

No, not for the politically-correct types. Their intention is to respect ALL religions at the time of certain holidays/celebrations.
The key to remember is to take the PC types for what they are worth -- they welcome others into a multi-cultural society with open arms, yet those they welcome will not often do the same for them. Why not wish others a "Happy Winter Solstice"?

I think it is too politically correct. I feel people should say whatever their tradition is. For example if you believe in christmas you should say "Merry Christmas" or whatever your tradition is. People should understand with all the varied traditions and accept them. I don't think we should try and change what people believe but accept each other.

I think so
everyone tries to be too politically correct these days.
Why would you say "happy varied holidays?"
By saying only "happy holidays" it means that you do not just mean one, or else you would say it as so
like- "Merry Christmas"
