Cool here means imperturbable rather than having a low temperature. Cucumbers are cool to the touch.
you would expect cucumber to be warm laying in the garden but they are cool
youwould expect someone to be hot under the collar forsomething but they are calm

I have to be honest, I have no idea. I prefer Stuart Scott's "cool as the other side of the pillow" which I think is inventive and based more upon reality. I mean, the other side of the pillow really is much cooler.

the same reason they say "in like flynn" or "i'll be there like bear"....im not sure of the reason :S
