You can't go wrong with something simple. You could do her birthstone, her fav color of stone, or if you wanna be really romantic you could get the stone of the month the two of you first got together. Diamond would probably be a little much unless you two are pretty serious, like 6 months to a year serious. Or you could do a really pretty silver (or gold) heart or cross. Pearls are also really nice and classy, depending of course if she's a pearl kinda gal. ( i.e. punk chics aren't really pearl gals) But if she is classy, then pearls are a great way to go. You can get an 18" strand for around $200 or less. Pretty much any jewelry you get is gonna really impress her. It doesn't matter whether she likes it or not (let her know she can exachange it if she wants) she will really appreciate the gesture.

Well depends on the price range you're going for. "Diamonds are forever". At least that's what they say. Why not be original and buy her some other kind of necklace like pearls or amethysts. If your budget range is slightly smaller go for a silver necklace with a hoop. Very chic now.

I think something from Tiffany's would really grab her attention. Search the website for the "Return to Tiffanys" line or the Elsa Peretti heart necklaces.
Sterling Silver is obviously going to be more affordable-- $125-175.
Plus, if things last between the two of you, you can get her any number of bracelets or earrings from Tiffanys that will match perfectly-- for next Christmas or her birthday.

I think it's good that you realize you don't want to go "over the top." But what kind of jewelry does she usually wear? Gold? silver? stones? flashy stuff or more earthy-bead type stuff? I guess the only way to tell what her jewelry style is to look at what type of stuff she already has. But I don't think you can go wrong with buying a thin delicate chain in either gold or silver with a small single stone pendant (stone of your choice). That's fairly basic/safe, pretty and not gaudy or over-the-top.

kind of depends on her style. if she is up to date with everything buy her something with a big center peice to go with an outfit she has. or if she is classy lik some other ppl said get pearls or something. if you guys have been together a long time then maybe a little ring. Or maybe a nice shiny braclet?

I'd suggest something small and delicate if she doesn't wear a lot of jewelery. Teardrop shaped crystals or heart shaped pendants are always lovely gifts no matter what metal or stones are in them and there are a lot of choices.

Does she like silver or gold? White or yellow gold? Plain or flashy? I think that a gold necklace with a diamond pendant is a beautiful yet simple necklace to give someone. It's an everyday necklace as well.

a simple neclace with her birthstone and maybe some matching earrings. you don't have to overspend if say she's april or somehting, and you could allways make her one your self :) I would die if my bf did that for me :)
well, if you can't think of anything, gift cards and cards are awesome.
