Volcanic rock is mineral rich and is soemtimes processed into powder form and used as an organic soil ammendment to enhance poor soil's trace mineral content.
Explosive volcanic eruptions can throw ash and dust way up into the atmosphere, which blocks some sunlight and may counteract the (not proven) effects of global warming.
Volcanoes build up land and over millions of year islands can form, become fertile, and become habitable for humans.
Undersea volcanoes in the Pacific ocean MIGHT be responsible for the cyclical "el Nino" warm water currents that give North America mild, wet winters when they occur.
These are just a few off the top of my head.

volcanic dust is very mineral rich. Are you asking about active volcanoes or inactive?
Volcanoes are land builders.. for example.. the volcanoes in Hawaii cause the island to grow appx 15 cm a year... doesn't seem like much but figure that over 100 years.
