I am 30 years old, started riding when I was 8. Always lived rural and always owned bikes. Heres the deal I understand using the gas and break but some guys are just really good. Do they practice with a wheelie bar? I wanna learn to ride a mean wheelie?

Get the throttle into the high side of the power band and leave it there. Learn to use the clutch as your only variable so it is easier to control your power to the ground. This technique also helps for launching your bike as quickly as possible.

I seriously recommend a wheelie bar at least for the first while.
A lot of use also are very careful to fully hold the front straight while in the air. Just use caution and make sure you have lots of space. Its best to do from a stop. Revvvvv High and Have Fun!
