sucrose is covalent because its composed of only nonmetals, and cacl2 is ionic because it has both metal and non metal elements

The measure of the attraction an atom has for shared e- is called electronegativity. The difference between the electronegativity values for the two atoms bonding will determine if they share (covalent) or donate (ionic) electrons and what kind of bond they form.

CaCl2 is ionic because the difference between the two values is high (> 1.7) sucrose is covalent because the difference is lower.
