What are some good Metal bands that sound like Nightwish,Dragonforce, and Pagan's Mind?

Don't listen to some of the idiots responding to this. Based on the bands you listed, you are obviously looking for some power metal. Here is a short list of some a few good power metal bands.

Dragonland (Newest album: Constellations)
Luca Turilli
Symphony X
Dragonland's newest album is probably what sounds most like Nightwish, and as for the rest, they are all somewhat similar to DragonForce, although not as fast, yet in the case of Blind Guardian, Luca Turilli, and Rhapsody of Fire, more epic / symphonic. Symphony X is progressive metal, with HEAVY power metal influence. You can get some mp3's from their site for free, legally. Avoid crappy nu-metal at all costs, (Slipknot, KoRn, etc), as they are NOT what you are looking for based on what you said. I have seen DragonForce and Blind Guardian live, and they are both amazing.
Note: Willie and Metalkraken, good lists. I agree with you both.

Stop Listening to Dragonforce, it's all style and no substance. Instead check out Blind Guardian, Hammerfall, Leaves Eyes (for the fairy metal), Summoning, Forest Silence, Tyr, Amon Amarth, and Bal-Sagoth
