I think the best answer would be Basilisk. Isn't Ninja Scroll a bloodbath? Basilisk is pretty violent too, and I think it's made by the same creator. I'm not into total gory bloodbath movies and stuff like that, but Basilisk sounded cool so I tried it.

Try the Kenshin series. My friend got me into it and we saw the whole series just before Cartoon Network broadcast part of it. Great swordfight action and brilliant character development in each and every episode. Nice humor, too.
