you've answered your own question........outfitting is the general all encompassing term for getting a boat ready to go......unless its for the first time, then its commissioning.....provisioning refers to putting food aboard, manning is putting crew aboard, fueling or bunkering is putting fuel aboard

A ship Chandlry usually handles supplies. All supplies for the vessel are referred to as ships stores. Signing on crew is Crewing. Preparing the physical aspects of the vessel is fitting out.
