a chicken is a particular type of fowl. a hen is a female bird, as we have eaten and kept chickens for many years as a society the word hen has become associated with chickens in our minds but a pheasant hen is a female pheasant, a guinea fowl hen is a female guinea fowl, a chicken hen is a female chicken etc.
