I heard an interview of Meatloaf one time... he said, in summary, that the "that" which he won't do, is what is in the question before.
So in each lyric, the line before he says "I would do anything for love..." is what he won't do...
I'd never lie to you and that's a fact...
But I'll never forgive myself if we don't go all the way, tonight...
But I'll never do it better than I do it with you. So long, so long...
But I'll never stop dreaming of you ev'ry night of my life, no way...
Confusing... a bit... but a great song!

The answer is... According to Meatloaf himself... What he just mentioned prior to singing... "I would do anything for love, but I won't do that."

Cheat on her or leave her. The chick singer in the song says ... "Sooner or later you'll be runnin' around" and so on.
He's promising he won't cheat or leave ... "but I won't do that". You have listen to the story in the lyrics.

screw around. It's towards the end of the song, in the part where the female is singing: "Sooner or later, you'll be screwin' around." And he replies: "I won't do that!"

she sais in the song that he'll eventually "screw around" . he wont do that. listen to the song the whole way through, you'll hear it.
