I should know this one, but I'm going to guess kidneys.

I just google searched it, and it is indeed the kidney.

In adult humans, erythropoietin is produced primarily by peritubular cells in the kidneys, where production is stimulated by a low oxygen concentration in the blood. Some erythropoietin is produced by the liver, which is the primary source in the fetus.
