Prince Charles and Late Princess Diana wanted to name their second son Henry, after the King Henry the eighth. Because he was a notorious king they decided to call him Harry not to be reminded of the King.

Its just a nickname, they decided to just call him Harry right away, I read it in a book about Princess Diane
Look at William his friends and family dont call him William often they call him Wills

Because it's a ploy to make him seem more homely and down to earth, like one of the regular guys you could met anywhere. Any way, he's not a fully fledged royal, he's the offspring of James Hewitt and Diana, just compare him and Hewitt and you'll see.
