I gather that there are two basic kinds of stollen: Dresden stollen and then one with spirits that is a little more cake-like.

Q: Could anyone be so kind as to tell me which one of them is more popular ... or authentic" Which is the "original" or has it changed from the original into something everyone likes better?

I'm a big stollen fan. At one point, I combed cook books and the internet, and there must be a zillion recipes for stollen, some quite different. My favorite is my great aunt Johanna's recipe, which includes coconut, golden raisins, and almonds--but no candied fruit. I believe that is more the Dresden style? But my mother's mother made it with candied cherries. I have made both, and they are totally opposite in taste and texture.

the one I like is more like a pastry than a cake. The German store in our town sell it and I make sure that I am in line to get one. There isn't rum or any other alcohol in this one. Oh it is so good. I wish I had a recipe so I could make them for gifts.
