I was a hostess the restaurant I served at first, then I started running food and working as a server's assistant and food runner - then when the time is right, I approached my boss and asked to make the switch to server. It might take a little time - but all of the above are still tipped out at the end of the night. Or you could try someplace that's not always so slammed first to get the gist.

A friend of mine who has been a waiter (and a well-paid one at that) for almost twenty years now.

He started out as a dishwasher at the local "mom and pop" Italian joint down the street from his house. He then moved up through the ranks to prep work, gopher and then to hosting/waiting tables.... from there he had enough experience to hop to a nicer restaurant in a fancier part of town.

He loves his job and has really made himself a successful career waiting tables at REALLY nice restaurants.
