Pretty much anywhere you go in Vegas you are going to have a good time.
It's been a few years since I was there, but some of the things I enjoyed:
The white tigers at the MGM grand. The are(were?) located by a cool little cafe called the "Rain forest Cafe". It's worth dropping in and having a burger at the Rain forest and looking at the Tigers hanging out on the rocks in their habitat.
New York/New York is worth a walk through. There is a magic shop called "Houdini's" that is a great place to pick up a couple of novelties for the kiddos.
It's worth going down to the Luxor just to see it.
I have heard good things about "Venice", but haven't had the opportunity to go there.

Definitely take the time to walk the entire strip. You will see so much just doing that. I had the best time in The Paris, and the Belagio is a must see. In the belagio they have a great buffet. It is kind of pricey but so worth it. they also have a great garden display, fountain and light show, and the tigers too.
There is so much to see in Las Vegas it's hard to pick out just a couple. You should definitely make the Belagio a stop while you're there though.

Definitely visit the Bellagio at night for the fountains, and walk across the street and go to the top of the Eiffel Tower for some pics. Just cruise the strip- You'll have fun wherever you go. And definitely buy a monorail ticket. It's totally worth it!
If you have time to get off the strip, rent a car and check out the Hoover Dam and Red Rock Canyon.

The Grand Canyon is spectatcular. For a bit of fun, you can't go past Circus Circus. As I was only young when I went there I don't remember a great deal but making your way down the strip would be your best bet to see everything. The white tigers, dolphins & other animals, Rollercoasters, BRIGHT LIGHTS, Partys & Night Life!

Be sure to go down to Fremont Street and check out the canopy show. Also, the Spearmint Rhino is the best club in town, if you know what I mean. Eat at In & Out burger and Margaritaville on the strip.
