taken by = short for "taken in by" meaning "enchanted", "enthralled", "entranced", ie. the writer really, really, really likes them

documentaries = film or television programs that are neither news nor fiction, but which seek to "document" a person, place, event or thing by exploring through the visual media. Therefore, "documentaries of the great outdoors" could be alternately worded "nature documentaries." Things like National Geographic specials or the old "Mutual of Omaha Wild Kingdom" series are this kind of programing. In film, "March of the Penguins" was a nature documentary.

you know the sort = the writer is assuming that her audience knows what she's talking about. i.e. "you've seen this kind of documentary"

Sentence #2:

rewarded = to receive something as a prize. In this case, the effort of the travel (I'm going to assuming hiking and/or climbing) reveals beautiful meadows and gorges and the view of those meadows and gorges is taken as a reward (for the climb) by the writer.

high summits are the tope of mountains and out of character means not in the way you usually behave or react to something
