At the Magic Kingdom, some of the more popular gentle rides at the parks include Buzz Lightyear's Space Ranger Spin and the Tomorrowland Indy Speedway; the park also has Peter Pan's Flight, Cinderella's Golden Carousel, Dumbo the Flying Elephant, It's a Small World and the Mad Tea Party in Fantasyland and Goofy's Barnstormer roller coaster in Mickey's Toontown Fair. Also included are Splash Mountain and Big Thunder Mountain Railroad in Frontierland. Adventureland has the Pirates of the Caribbean ride.
Children's rides at Epcot are limited; the only one strictly child-oriented is Journey Into Imagination with Figment. Soarin' is suitable for all ages. Universe of Energy is a slow-moving, yet entertaining ride through the history of energy. The Seas with Nemo and friends is at the Living Seas pavilion. The Norway pavilion has the water ride "Maelstrom", but the presence of a three-headed troll might scare some children.
Disney-MGM Studios consists mainly of shows like MuppetVision 3D and the Lights, Motors, Action Stunt Show as well as Indiana Jones Epic Stunt Spectacular. Some rides children might enjoy are Star Tours and the Great Movie Ride. The Tower of Terror and the Rock 'n Roller Coaster might be a bit intense for children, though.
At Animal Kingdom, some suitable rides for children would be the Kilimanjaro Safaris, Kali River Rapids and Primeval Whirl. Other rides such as Dinosaur and Expedition Everest could possibly be too intense for children.
You'll also find the Typhoon Lagoon and Blizzard Beach water parks as well as Downtown Disney. Downtown has many shops and restaurants and also has a 24-screen movie theater.

That is the perfect age to take kids to Disney! They will remember the trip, and enjoy all the rides. Absolutely see the Wishes fireworks at the Magic Kingdom. The Spectromagic parade is really cool, too. Our must-do list includes Pirates of the Caribbean, It's a Small World, Haunted Mansion, Splash Mountain, the Carousel, Jungle Cruise, and the Buzz Lightyear ride at Magic Kingdom. My kids also love Animal Kingdom... don't miss the River Rapids and the Safari ride.
At that age, EPCOT and MGM may not be as much fun for your child.
A couple of tips:
Rent a stroller. At 5, they still get incredibly tired. It's worth the 10 bucks. Tie a colorful scarf on it to make it easy to find when you get off a ride.
If you have a child that may be afraid of the dark, take a glow stick or a small key chain sized flashlight for them to hold on the darker rides, like Pirates of the Caribbean and Haunted Mansion. This can be a lifesaver.
Take plenty of pictures. You will want to remember everything.

Disney Magic Kingdom and Animal Kingdom would be the best small child choices. Magic Kingdom has more for a 5 yr old to do in a day it could take a few. The classics are always the best -- pirates of the carribean/haunted mansion/small world/snow white/peter pan/pooh. splash mountain is always great fun. lesser things like the tiki room and swiss family tree house are no line fun things to look at. stitch and buzz lightyear are two newer ones you probably didn't grow up with. most rides with height restrictions are 40" --

animal kingdom is short on things to do other than the animal expiditions -- the bug's life show is great and the lion king show is probably the best live show at disney.

If your child is an animal lover, go to the Animal Kingdom. I would recommend going on the Safari in the morning or at sunset when the animals are most active.
Id also recommend anything in Fantasy Land. I dont remember this, but according to my parents we went when I was three, and I supposedly went on Dumbo 5 times in a row, and Its a Small World more times than they could count.
Also, if you have a free day, check out Blizzard Beach, its a splash. (no pun intended there)

Plan to go early, take a break in the afternoon, then return in the evening. The parks are always the most crowded from about 11am - 3pm. That's the perfect time (with a little one) to go back to your hotel (if you're staying on property -- if not, just pick a hotel you can take the monorail to) have a nice lunch, let the little one take a nap, then go back to the park!

The biggest must is let them have a camera. The best pictures I ever got of any amusement park have always been taken by my kids - they just see things differently and the pictures are always amazing! Have fun!
