Touchwood is something that is said to ward off the "evil-eye". In earlier times (in the Western World), people used to touch a wooden cross whenever they wanted to protect themselves from the devil/evil eye. This has now changed to just touching wood.
Dude is just another word for "guy".
Buddy means "friend".
