Its exact origins are unknown, however, knocking on wood has been a superstitious action to ward off evil throughout history. Some believe it has to do with knocking on the wooden cross.
Dude - This is can be used to refer to any person whether they are known by the speaker or not. Ex. “That dude is stealing my car.” Or “Dude, I’m glad you finally called.”

Touchwood is something that is said to ward off the "evil-eye". In earlier times (in the Western World), people used to touch a wooden cross whenever they wanted to protect themselves from the devil/evil eye. This has now changed to just touching wood.
Dude is just another word for "guy".
Buddy means "friend".
