Eternal Sunshine of the Spotless Mind - rated R for language, some drug and sexual content.
Not your typical chick-flick-romance-movie, but very romantic and thought provoking in it's own way.
Love Actually - rated R for sexuality, nudity and language.
A good romantic movie about all stages of love at all stages of life.

Before Sunrise (1995)
Before Sunset (2004)
Both movies are mostly conversational and happen in real time. It's more realistic and you could learn a lot by just watching these two.
