What does "chop style" restaurant mean?

Orginally it meant that they cut your order there in the kitchen. Now, it's nothing more than another name for a steak house.

Where all the meat comes in little chops of meat. You wouldn't just get a piece of meat or chicken but it comes chopped in small pieces.

They order whole sides of meat and cut the meat fresh instead of ordered pre-cut.
Also sometimes for pork chops.

Here in CA it pretty much means your only options are chops of meat. Steaks, pork, etc... All meat all the time.
