I Won't Last A Day Without You by Paul Williams, covered by Utada Hikaru and Shiina Ringo. Besides it sounding really cool coming from two Japanese singers, one with a better English dialect than most American singers and the other with a gritty soulful tone, respectively, it's also done with real feeling. Hikki's got a great voice if lacking direction, but is picked up by Shiina who's very selective about what music she pursues and her tastes. Also, any cover of a Paul Williams song can't be bad as Paul Williams was one of the greatest singer/songwriters of all time in my opinion.

"Smokin' In The Boys' Room" by Motley Crue.

This was a song that was popular for a very short time in the 70s by a one-hit wonder (Brownsville Station). They covered it in 1986 and brought it back to a new generation of people that had never heard of the original or the band that did it originally. They also made it a big hit for themselves.

Hendrix' cover of Dylan's "All Along the Watchtower."
Dylan has always been a great songwriter, but not very musical in his performance.
Jimi's interpretation of the song was intense and ominous, his singing was ferocious, and his guitar was blazing.
It also may have been Mitch Mitchell's best drum work.
Nearly 40 years later, that recording still blows me away.

Proud Mary by Ike & Tina Turner, they did it their own style and they did it fabulously.
