If you are on informal probabtion in CA...?

can you leave the States for a visit to Canada? Or can you even leave the state of CA?

depends on what you did. It should tell you what are allowed to do and not allowed to do in the papers you rcvd telling you that you are on probation.

Look over the paperwork that you received in court when you were put on informal probation. They should tell you all of the particulars of your probation. But I'm pretty sure that it just says break no laws no matter where you are.
