Being at one with nature means that "You think and feel as one". It means that you are "connected" to it.
Being at two means "having two ideas or feelings". I Have no connections with nature.
Grammatically, it is correct but can only be used humorously the way Woody Allen used it.

Well, being at one with nature means being in sync with nature, you and nature are one of the same. So, being at two with nature would mean the opposite. Being totally separate from nature. No common link. This would be classic Woody Allen, separate from nature.

It's a play on words. I am one w/ nature means you are in harmony with it. By saying , I am two with nature, he's saying the rustic life doesn't agree w/ him.
