There is no difference between metabolic oxidation and reduction and any "standard" definition of oxidation and reduction. Chemically, oxidation is the removal of electrons from one thing, and reduction is the transfer of electrons to that thing. The chemical definition of oxidation does not require or necessarily involve the reaction with oxygen, though that is one type of oxidation-reduction reaction that commonly occurs.
