I keep 3: AVG anti-spyware, Spybot S&D, and Adaware. That may be a little overkill, though.
I would say at least 2 though. One always misses something.

I have none. I sometimes try dangerous programs, and if it installs something I don't want, I uninstall it. It's just a matter of understanding how they work and knowing the startup methods.
But, you can install as many antispyware programs as you want. They all don't work off the same virus lists. I highly recommend you always turn of "always running" features. (Having a bunch of antispyware programs running is going to make your system slower and more unstable than if 1 spyware was running. Particularly in the case of real spyware, the trojan themselves take up a lot less resources than the antispyware.) Just run them yourself when you want to check your system, or a specific file.

Most of antivirus nowadays is come together with antispyware. Norton for instance. However, antivirus is not specialist in spyware. Thus, it's compulsory for you to get antispyware standalone. You can try download SE Ad-Aware from www.download.com. It's free indeed.
But the best antispyware is SpySweeper from webroot. One antispyware is adequate because if you install more than one antispyware, it can provoke conflict and result in system crash. So too antivirus. Install more than one antivirus can cause conflict!!!

A lot of competing spyware and virus programs don't 'play well together'. Just look for one good one and stick with it. I use AVG, but I think my provider uses Norton.
