Hey dere ya big fella! Ahhh, 250lbs, I remember when I was that skinny. I don't use a motorbike to haul around my mass, I use a lawn mower. If I were you, a 250 would be fine. With your job as a mover, oops, I think you'll lose weight and the 250 would be a fine choice. Me on the the other hand, I am afraid to go swimming, because everytime I do, a whaling ship comes out of nowhere!!!

What kind of riding/racing will you actually be doing?
Be honest with yourself about how much track time you plan on taking, and compare it to what time you'll probably spend riding trails.
If you're going to be spending most of your time on the trail, with an occasional foray into local racing, then check out some of the KTM enduro (EXC) models. The suspension and power are great for aggressive trail riding, and will work fine for a weekend a month on the track.
If you're only going to be riding on the track, and you're planning on buying a new bike, first figure out what class trophies you'll be chasing, then check out the bike that is most popular in that class. Sure, there may be a bike that actually suits your riding style and size better, but if you go with what's most popular, you'll be able to use other riders' help in setting up the bike for the track.
I agree with others here - four strokes are the wave of the future, however, there's nothing more chancy than buying a used four stroke mx'er - so many things to go wrong, and so expensive to fix if they do. If you have to buy used, and are on a budget, look for a two-stroke CR250, or YZ250 that's a couple years old (I wouldn't buy anything older than a 2000 model though). Even at your size, they still have plenty of bark.
Yes, the CR500 is an option if you'll be riding your age class. However, there is no displacement class at most tracks for the 500. Also, this machine has tons of power - and is great for a skilled rider with tons of stamina. If you don't have the skills or the power, this will not be a fun ride.
Also, don't forget to budget for some good quality boots, chest protector, and helmet.

2stroke bikes are slowly being phased out I would recommend going with the honda or yamaha 465 4 stroke. Im not sure of the sizes but a 4 stroke 250 is not going to cut it.
