I am a 24 year old dad, and a have a 2 year old son who I have midweek and at weekends. I work part-time due to illness, but rent a council property. As I regularly have him overnight, I just wondered whether father's, in general, have the right to seek a 2 bedroom property, where it concerns the child's best interest?

I dont see why not - probably depends on how desperate the housing shortage is in your area. Contact the council and ask them - if you dont ask you wont get. I think you sound deserving of one. Ask them and good luck xxx

Where do you live?

Here in the good old USA you could live in a 10 bedroom house if you wanted. You should be able to find a home/apartment of whatever size you feel fits your needs.
