I have a 100 year old New England Cottage style home where the floor sags on the 2nd floor but not the 1st floor. How do I fix this?

sounds like they may have used undersized floor joists in construction. If the first floor ceiling has an opening or maybe a peep hole you maybe can see how wide the boards are. If they are 4 or 5 inches wide then they are undersized. solution is to either remove the ceiling and reinforce the upper floor. Messy.
Or support the floor from below the ceiling with a joist running the length of the room with supports at the ends or maybe the moiddle depending on the height of the ceiling and the lengh of the run. Find an engineer.

LET THE JACKED UP BRACING TO SET FOR A WEEK. 2/ GO TO THE SECOND FLOOR REMOVE FLOORING AND NAIL ADDITIONAL FLOOR JOISTS TO THE EXISTING ONE USING SOME CARPENTER GLUE AND NAIL THEM TOGETHER. USE LAGS SCREWS LONG ENOUGH TO PENETRAT BOTH JOIST. LET IT SET FOR 24 HOURS SO THE GLUE WILL DRY.
THEN REPLACE THE FLOORING AND REMOVE LOWER BRACING.
ANOTHER WAY IS TO REMOVE THE CEILING SHEET ROCK AND JACK UP AS DESCRIBED EARLIER AND USE 1/4" PLATE METAL AND LAG SCREW INTO THE EXISTING JOIST..
