Corvoussier Cognac. I am not sure of the spelling of the brand. But this cognac is expensive and is of the best quality. It has an endless shelf life. Even if he does not drink alcohol, he can use it to treat friends in a high-class way when they visit him.
It tastes great. The aroma is "intoxicating" literally and figuratively.
Once, on a very cold and wet winter day in Denver, I ordered a CC after dinner in a restaurant. The waiter got the drink too hot. But the aroma filled the entire restaurant. Diners bought and drank all the restaurant had that day.
I had to give the owner my name and address so he could send me a formal "thank you."

Guys always like to eat. I would buy your co-worker a gift certificate, along with cookies or something (homemake always hits the spot, if you're a good cook).
Be careful about the "interested in" thing though. If he proves not to share your interest, all you'll have left is an uncomfortable working relationship.

Invite him to lunch and use the occassion as the reason. Or make cookies and include a gift certificate to a local favorite spot.

Simply a Christmas card, or something simple and small to express your friendship with him. I would say the key point is to keep the gift and the idea simple.

Penknife or multi-tool.
Or a jar containing your phone number in an envelope, with a label saying "OPEN IN CASE OF EMERGENCY, LONELINESS OR FRISKINESS"
