From where we are right now, we can measure distance and direction to other stars and objects in the sky, so we can prepare a pretty decent three-dimensional map of the galaxy. Computer imaging, then, can turn that into a pretty decent "photo".
Plus, there are lots of other spiral galaxies out there that look, from a distance, pretty close to what we calculate the Milky Way to look like, so we can substitute one of those photos and say "this is what the Milky Way looks like".

We asked somebody from 'over there'. They said 'It looks like an Austin Allegro, man' but we didn't believe them and we just had to make an educated guess based on what we could see and the shapes of other, distant galaxies.
Incidentally, intergalactic probes have not been invented yet. What do you think this is, Star Trek?

Quite easy really.... for many years they have been sending probes up with cameras that send the pics back..... But it does take a few years for the pics to get back.
