People do seem a bit obsessed with protein shakes! The best way to go about things, having done it for a couple of years, is to eat every few hours, but never over fill yourself. If you can, have a bowl of museli, ven pasta pre work out to give you the energy, and then a meal heavy in protein post work out. The extra calories you have are needed to build up the muscle bulk you desire.
Also, take at least a day a week to work hard on the cardio as it conditions your body in a different way to weights. If you're keen on bulk, follow a rugby diet (such as the one i'm on) and make sure you shift some big weights.

protein is the best thing for bulking up! eating lean meat is best for you health, as fatty meats can be dangerous to your cardiovascular system. To make it easier for you, whey protein shakes are the best - this is because they contain important amino acids, which build up proteins, and are more readily absorbed by the body.
To get definition, don't eat breads, pasta, cereals, rices or grains (don't forget CORN is a grain). This is extrememly healthy for you, as processed grains are void of nutrients and are therefore just used for raw energy. Rather than raw energy, you want to be fueling your body with nutrients, so it will feel fuller, but more importantly be able to help build muscle, and shape the body.
Vitamin C, is known to help build up collagen alongside zinc (good for tissue growth). They both could be considered useful as supplements, but go easy on the zinc. (They are also antioxidants, which means they will help to protect any damage you may get from the exercise!)

don't worry about putting on fat at first, if you want to bulk up you need to take on board more calorie's than you are burning off, especially if your thin. lift heavy weights to get your straight up eat loads of protein based foods and get lots of carbs down you. as soon as you have put on good weight then you concentrate on losing the fat with more cardio, lighter weights etc.
it all depends on what type of body you have, and how easily you put on weight. i can put on weight easily so i have to watch my calorie intake, not so much carbs and heavy on the protein with high reps with a medium sized weight.
the best advice i can give you is do loads of research and experiment with different ways of training to see how your body's gonna react. good luck.
