You could make a math board game.... It would exactly be a model but it would be really cool for an exhibition and wouldn't bore either.....you could make a few classes for Algebra, arithmetic, geometry etc... then make a booklet of questions easy(for say class 1-3), medium (class 4-5), difficult(6-9).... make people throw the dice and ask them a question from the booklet depending on the number rolled...move one step ahead for every correct answer... the person to clear all classes is the 'MATH WIZ'...you could hand out some toffees to those who win...... I m sure it would be a crowd puller......

Check out some FRACTALS, they are equations that when graphed result in endlessly repeating geometric shapes, they look awesome and are a really interesting thing. You can talk about some of the theory, print some nice ones and put them up on your poster etc. Some of the sites below even have downloadable fractal generators that you can put your own numbers into. THe math isn't that hard and as a bonus fractal designs look very cool. Good luck!

try making pyramids, cuboids, or some geometrical figures like that with card board pieces & cellotape and explain their properties.you know like volume of a cuboid=lbh........
