The Poop Deck is the open deck on the raised sterncastle of a sailing ship.

The poop deck is aft. It made it easier to leave behind the dropings into the ocean. Captains "head" was there so he could keep better track of the track of the ship. The crews "head" was forward actually. The sailors went in a hole in the deck on either side of the bowsprit. This was good because the ships generally sailed downwind.

Up one level from the main deck extreme aft that is the poop deck not every vessel has one. You will see such decks in movies like TITANIC it's where all the people went to just before the ship sank.
