I would say it is texture and composition. Texture means the shape, size, roundness of grains, their sorting, etc, This is more important for clastic or detrital sedimentary rocks (derived from the mechanical weathering and erosion of the pre-existing rocks, because it gives us the history of origin of the rock. For chemically-derived sedimentary rocks or biogenic sedimentary rocks, the composition is more important - it gives us an idea about the environment of deposing.
Another important feature of sedimentary rocks is the primary structures (like bedding) preserved in it.
