With respect, general tourists won't go beyond tourist districts, so if you stick with Central, Stanely, the Peak, Wanchai, Causeway Bay, Tsim Sha Tsui, Jordan..etc, you will be fine. If you want to go to non-tourist areas, you may have some communication difficulties but never serious problems. After all, Hong Kong has been a British colony for over 150 years. Some Hong Kong Chinese may not speak fluent English or understand complicated English or English slangs but they should be able to get what you mean if you speak plain English. Don't worry.

Anything that does not require you to put in writing or sort in Chinese: clerk, secretary, waiter/ waitress, and so forth... Not so much of a hazard given that so much folks in Hong Kong discovered Chinese and English in university. Unless you propose on being an English instructor and instruct kids or older adults who desires to gain knowledge of English, or a task that entails specific advantage or suits the requisites of a designated activity which best you and nobody else has. You maybe worried in revenue, and so forth...?

Hong Kong (HK) like Singapore (SG) was once colonialised by the British. And as a result, English schools were established.
Therefore, people in HK can speak English, much like the people in SG. Though you will encounter a certain "slang". Because the Cantonese(who make up the majority of the people in HK) take very much to the intonation of their spoken dialect, hence their English might not sound familiar to you...just needs getting used to. Just like if you visit SG, you will have a taste of what we like to call "Singlish". :)

Yes they do. It'll be like any country with tourists, you will find people who will speak some English. The city areas are better - cantonese is usually their first language, then English is the second. If you're worried, then stay away from the rural areas.
