I want to sell in farmers markets, to chefs.... Currently in production are: Greek and Italian Oregano, French Tarragon, English Thyme, Sage, Dill, Epazote, Marjoram, Garlic Chives, Fennel, Chervil, Flat -leaved Parsley and Bergamont.

Any other suggestions?

Savory. And for the woderful scent grow some Lavender.. I always buy Savory, Oregano and Lavender at the Farmers Market.

I would say Cilantro, but that isn't much of a cash crop compared to the rest you listed. Rosemary grows like a weed and doesn't really need any tending. Onions and Garlic take up too much acreage for the buck. How about a couple different types of Basil as well as a couple types of mint (lemon, etc.)?

I would suggest Chocolate Mint and market it as an addition to peoples coffee. There is a lady at our local farmers market that does this and she says it sells quite well. She has her "regulars" that come by specifically for that :)

Well i didn't see mint in there? Thats used in alot of dishes..how about garlic cloves! Everyone uses garlic.
