From everyone responses to my questions, I am getting more and more great ideas about Christmas. Can you please share with me your a recipe or possibly more recipes for Christmas breakfast and dinner? What's the perfect Christmas dinner in your and your family's eyes. I was never interested in Christmas, but I want to make my nieces, nephews, and godchildren to have a brighten Christmas if not for me for my late mother and sister. Your responses are greatly appreciated. Thank you in advance.

My family does "Christmas Breakfast"

My mom always makes her famous, keish (sp?)

like an egg pie with veggies chz meat...

and

her other famous shredded potato stuff

its shredded potato with cream of celery soup and sasuage. its delish!

We have the usual Christmas dinner-Turkey, stuffing, mashed potatoes (pretty much Thanksgiving all over again). Breakfast is just crazy around here. I make a coffee cake and have fresh fruit, but the kids eat Christmas cookies and milk (oh well!) Christmas Eve tho is good---I make a batch of meatballs in a sweet/sour sauce, cheese and crackers, shrimp cocktail, just a lot of appetizer type things-people come and go. I did start, 2 years ago, doing prime rib for Christmas dinner - I still have to do a turkey breast for my Dad and daughter in-law! Oh well, It's Christmas -- a little bit of everything for everyone! Oh yes--My son would think it wasn't a holiday without stuffed mushrooms! I made those years ago (the last Christmas with my late sister) for the first time and now it's become a "tradition". I was just trying to impress her!!

Here's two, you can choose which one you like best:
Molasses Sugar Cookies
3/4 c. oil
1 c. sugar
1/4 c. gold label molasses
1 egg
2 tsp.baking soda
2 c. flour
1/2 tsp. cloves
1/2 tsp. ginger
1 tsp.cinn.
1/4 tsp.salt
In a small bowl combine the flour, baking soda and spices. In a large mixing bowl combine the molasses,egg, and sugar. Then add slowly the dry ingredients. Chill for two hours. Preheat oven at 375. In a small serving or salad bowl, put some sugar in it then roll the dough into 1" balls and roll in the sugar and place 2" apart on the cookie sheet. Bake 8-10 minutes.

Carnation Pumpkin Pie
2 eggs
1 reg. can of pumpkin
1 c. sugar
1/2 tsp. salt
1 tsp. cinn
1/4 tsp ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
1 reg. sz. can evaperated milk
1 9" deep dish pie shell
Combine eggs, pumpkin, sugar, salt,and spices. Gradually add evaperated milk and mix well. Pour into the pie shell; bake in a preheated oven at 425 for 15 min.reducing the heat to 375 and bake for about 40 more minutes or until knife comes out clean.

we roast a whole hog over hickory wood takes all night christmas eve to roast it , now that my dad's dead i am the cook . for a glaze i mix i qt. apple cider with a qt. of oj , and a pt. of jim beam add a pound a butter an brush it on as the hog roasts for 12 hrs.
