Let's see...
In Manitoba you would travel through Brandon, not much there.

In Sask, you travel just south the the Q'Appel valley, which is quite scenic

Regina - some museums, a lake in front of the Provincial Legislative building

Moose Jaw has connections to Al Capone, and you apparently can see the tunnels used by him.

Swift Current good place to rest

Alberta:
Calgary - start of the hilly area

B.C.
Banff National Park

good places to just explore:
Golden B.C.
Revelstoke
Abbotsford

and then you are in Vancouver!

It's pretty dull and flat until you leave Calgary. Then the scenery changes dramatically when you start going throught the rockies. Be really careful, especially around Golden (It's a tiny town you will pass that is just inside of the BC border). The roads are really windey, and there is a lot of wildlife. Also this time of year you will hit snow and ice.

If you want a more scenic route, you continue on Highway 97 comming out of Kelowna (in the Okanagan Valley, about 5 hours from Vancouver), instead of going on the Kokahalla Highway (which has a toll, and plus it's really boring, and is pretty much only one town along the whole trip.). It'll add about an hour to your trip, but you will get to drive through the Valley, which has the most amazing sights. It's better in the summer. You will go through Penticton, then you'll take highway 3 to Vancouver. It goes through Manning Provincial Park, (which has a ski hill, hotel and cabins and camping), and a few other little towns. Well, you know Winnipeg, right? It's about the same until you hit Alberta. Edmonton has the West Edmonton Mall . Calgary is near the mountains. BC is the real treasure. Will you be going through Jasper? there are all sorts of cute animals there that are always on the highway. The mountains are beautiful. The weather is nice. Closer to Van, all the cities become closer together. More culture and rainforest. Just beautiful.

There are three/four different routes to get to Vancouver from Winnipeg, Manitoba

TransCanada or # 1 Highway is 2231 and shortest route

YellowHead Highway or # 16 is 2414 kms

Crowsnest Highway or # 3 Highway also called Hope-Princeton

When on Highway # 1 can travel through or take # 5 connector

Transcanada
-Travel through tp Brandon/Regina/Swift Current/Cagary/Banff
Golden/Revelstoke/Kamloops

Yellowhead Highway
-Winnipeg to Neepwa/Yorkton,Saskatchewan/Saskatoon/North Battleford/Edmonton, Alberta/Jasper/Valemount,B.C/Kamploops

Crowsnest Pass

Wiinipeg/Medicine Hat Alberta/Lethbridge/Pincher Creek/Frank Slide/Sparwood B.C./Creston/Castlegar/Grand Forks/Rock Creek/Osyoos/Princeton/Hope

Each one has different scenery. travelling off the Transcanada
allows you to experience the smaller towns through Manitoba and Saskatchewan

Once you are in Edmonton/Calgary/Lethbridge, Alberta the trip becomes more scenic

I suggest you look up any one of these travel routes as they have detailed information of attractions and pictures

Having travelled all of them I would choose Transcanada to Medicine Hat to Lethbridge and go the Crowsnest Pass Highway 3 in the winter months....200 kms more but highway in the southern interior are not as steep as Rogers Pass on the # 1
The Yellowhead from Edmonton to Jasper to Blue River/ Kamploops is also a good way to go in the winter months as it has a gradual climb through the Rockies.

The Transcanada from Winnipeg to Swift Current are subject to white out conditions in the winter but a well travelled route.

don't forget the roads on the way can be dangerous in the winter between winnipeg and vancouver. lots to see on the way. try and plan stops in banff, and kelowna
