For example, my last real work day (i.e., I show up) is July 31. Can I use up accrued vacation days/get paid until August 15?

This totally depends on your company's vacation policy, and maybe on your boss. Some bosses frown on your last day being a vacation day, because they would rather you were training the new guy, or wrapping up business. If your boss is cool and you are leaving on good terms, you should work with him/her once you give notice on the most convenient time to use the vacation. Remember that it is always advisable to quit a job without burning bridges, because you never know what opportunities arise with the same people later.

Under Georgia law you can. If you quit with a vacation due you are owed it. But most employees never know that:). Infact some companies will deni it.
But you can check with your company and the labour board.

It depends on company policy though. Most treat earned vacation as just that -- it's yours so when you leave it gets paid out.

I don't know about your company, but mine wouldn't pay me for a single day of vacation once I quit.

ha ha, good luck with that one. Why don't you take the vacation before you give them notice and then use your accured sick leave at the end.

Best plan is to use it, come back for a week, and then quit.
