Some suggestions:
First off, skip THE GALLERIA. Contrary to what you may hear when you get here, IT's JUST A MALL :) Now with that said. Here's what you should do to do something special in Houston during your stay:
Hermann Park Holiday Lights 2006

A couple of miles south of downtown, Hermann Park has its Holiday Lights on the 16th and 17th during your stay.
Holiday Lights 2006 will feature the following attractions each evening during the event:
Lighted statuesque live oak trees around the Mary Gibbs and Jesse H. Jones Reflection Pool
On McGovern Lake , lighted pedal boats which will be available for rent ($10 for up to four people for 30 minutes)
A community stage for local performing organizations
The traditional lighted tunnel and maypole
Food vendors
Holiday Lights in Hermann Park 2006 will be open from 6:00 – 9:00 p.m. on the following evenings:
December 15 – 17 (Friday through Sunday)
Trans Siberian Orchestra

The Trans Siberian Orchestra will be in town at the major sports arena, the Toyota Center, on the 17th (2 shows: 3:00 and 7:30). Tickets are still available at the above link. Always an awesome way to celebrate the holidays!

Shopping, dining, pubs...this place has it. And with charm and flair. Everything from the mainstream to the slightly funky. Be sure to visit the old five and dime store. You could get lost for hours in there. Whether you're high-roller diner (Benjy's) or want to take in some great food on a budget (Hungry's) you can find it all here. Uniquely Houston.
Space Center Houston

This is where "Houston" found out about the "problem" in space. Space Center Houston is not just for kids. Everyone should visit this place once. Whether it's seeing the astronauts training grounds, seeing parts of the International Space Station or soaking in the history of Mission Control, you'll have a newfound respect for NASA and what they do every day after just one visit. TIP: Watch the weather, since the tour of the property is outdoors via tram and the weather could be 70 degrees or 40 degrees. Welcome to Houston. :)

This is the locals' go-to guide and much can be found here. Trust the user reviews and find some great out-of-the-way restaurants to try (again - look at the user reviews). Stay away from the chain restaurants and you're sure to have some quite memorable meals! Search for the type of cuisine you want. Generally just south and west of downtown begins the "safe" areas for non-Houstonians. Anything on the west side of downtown between 59 and I-10 you should have no worries!

If you like clubbing you should go downtown Houston. On Main St. it has lots of different clubs. You should also think about visiting Westheimer. The galleria is there also fancy restaurants. Like:
1. Fogo de Chao (www.fogodechao.com) if your in the mood for steaks .
2.Yao's Restaurant and Bar (www.yaorestaurant.com) if your in the mood for chinese.
3. Ra Sushi (www.rasushi.com) laid back sushi place, plays upbeat music kind of like a lounge.
you can always go to mapquest to find these place.

Well i have lived in Houston all my life,now i am living in Bandera Tx but im not happy so we will be going home right after christmas...Houston has it all....There is a lot of stuff to do.A very good eating place uptown is KIMSON...There is lots of malls but you said no malls.... They have a under ground shopping in town,its called" china town"Housto is so large it really depends on what part of town you will be in...there is a website...houstontx.com it will take you to all the events..Its such a huge place so don,t be scared the traffic is bad, but I love it..

Go to Kemah. I know you said you didn't want to go shopping but you'll get bored so go to the Galleria and Memorial City Mall. Oh and if you want to eat some good seafood go to TAMPICO Restaurant, it's on Airline, by this open market and the area is kinda crappy but the FOOD IS GREAT and the PRICE is too. Ah what else? hmm...Idk? that's it.

my favorite Mexican food restaurant is Doneraki. It is on Westheimer. For late night we like ChaChos also on Westheimer. Actaully both are good for late night. Doneraki stays open late for the holidays.
I forgot Doneraki has mariachis for entertainment.
