When you sneeze you stop breathing and by blessing someone, they live.

1. Some people believed that part of your soul escapes when you sneeze, and the devil can get inside and occupy that part of your soul.
2. Some people believe that if you don't say Bless You after a young girl has sneezed three times in a row, that a leprechaun can come and claim her as his bride.
3. Some people believe that sneezing three times in a row means there's a witch in the room, and the only way to protect the person that sneezed is to bless them before the witch can cast a curse on them.

I heard somewhere that we say bless you because people used to believe that an evil spirit comes out of you when you sneeze. But I really have no idea where I heard that..

because a long time ago people believed that a sneeze was the sign of an evil spirit trying to escape the body. nowadays its just common courtesy.

It is an old pagan superstition. People used to believe that the soul left the body and was replaced or snatched by a demon. Saying bless you alowed the soul to reenter safley back into the body.

one belief is that the soul escapes your body...
a second belief is that when you sneeze your heart stops beating for a second...
(sidenote and interesting fact.. Ever notice that when you sneeze your eyes always close?)
