I think personally if your family is from Europe then you are European but it's gotten so confusing at times with this whose hispanic and whose not. Better just stick with what your parents put down.

I've always heard that Brazil is not counted as part of Latin America. It's because of some language thing, so you might not be Latino.

No, put Caucasian.. unless you have some Moroccan in you, than put other, but southern Europeans aren't Latino. So you should put white or caucasian, afterall, its in Europe
